After fishing, the salmon is carefully prepared for transformation into Lox, a refined product obtained through a salting process with a minimal addition of sugar and subsequent cold smoking for 12 hours at a controlled temperature not exceeding 20°C.

The Prince smoked salmon recipe is the result of the elaboration of an ancient North American native recipe, revisited to modernize its flavour. It is made up of 23 different types of local woods such as; maple, beech, larch, etc. This is how Prince salmon becomes a gourmet smoked wild salmon, chosen by excellent chefs, caterers and delicatessens.
